I've spent the past couple of days making things to freeze and put away of okra and cucumbers.
In a skillet, I sauteed bacon, onion, and green pepper. I added chopped okra to the pan. I then added a can of tomato sauce and diced tomatoes.

It's ready for gumbo in the winter!!
I made my Grandmother's Chow Chow.
It calls for 1 large sliced green pepper but I used banana peppers.

7 cups of sliced cucumbers

1 cup of sliced onion

2 tbs of canning salt
1 tsp of celery seed
1 cup of canning vinegar
1 1/2 cups of sugar
Stir all ingredients together and put into a jar. Keep in the refrigerator. This will last up to about 2 weeks in the frig.
YUMMY!!
It all looks great! Won't it be wonderful this winter to have that gumbo and remember all the summer garden goodness!
